Chicory (Cichorium Intybus) is a perennial herbaceous plant of the Compositae family, grayish-green in color, with a thickened root up to 1.5 m long. All parts of the plant contain milky juice. The stalk is up-straight, branched, covered with sparse hairs. The flowers are blue, rarely pink or white, reed, collected in numerous baskets. Chicory blooms from June to early September, the fruits ripen in August-September.
