Shiitake (Lentinula edodes) is an edible mushroom, a species of the genus Lentinula. The mushroom cap is convex, hemispherical, with small scales, with a diameter of up to 20 cm. Shiitake cracks as it ripens, and becomes flat as it grows. The edges are even, slightly bent and thinner in mature mushrooms. The color of the hat varies from dark brown in young to light coffee shades in mature mushrooms. The plates are smooth, white; acquire a brown tint when pressed. The leg is fibrous, even, narrowed to the base. The pulp is dense, fleshy with a pleasant mushroom aroma. Shiitake mushrooms grow solitary.
