Green tea is a type of tea made exclusively from Camellia sinensis (or Thea chinensis) leaves that must not undergo any oxidation during processing. Of Chinese origin, for centuries it has been consumed in various Asian regions, from Japan to the Middle East. Only recently it has also found its spread in the West, where traditionally it is consumed mostly black tea. Globally, it is the second most widespread variety of tea: of the 2.5 million tonnes of tea produced worldwide, 20% is green tea (78% black tea, 2% Oolong tea).
